Gyoza-Ya Ryu's gyoza are all homemade, from the skin down.

The crust used is made in-house by professional flour makers.
It is bite-sized, about 8 cm in diameter, with a crispy texture when baked,
The balance with the red bean paste inside has been calculated to the utmost.

Vegetables used for bean paste are Japanese cabbage, chives, and leeks from contract farmers.
We are especially particular about leeks, which have a strong sweetness and aroma.
The meat is "Seto no Mochi Pork" shipped directly from "Seto Farm" in Fukuyama.
Juicy and flavorful, it is a perfect match for gyoza.

For baking, rice oil is used, which runs out of oil easily and gives a light texture.
Furthermore, by baking them all at once at a high temperature of about 260°C on an originally designed special griddle,
The dumplings are crispy on the outside and juicy on the inside.

We offer vinegar and soy sauce sauce sauce from Kawanaka Soy Sauce and lemon miso sauce jointly developed with Masuya Miso.
